Ingredients

2 Tbsp Canola Oil (2 Tbsp Ghee)
1 Tsp Cumin Seeds
1 Onion (diced)
1 Tsp Ground Ginger
4 Cloves Garlic (minced)
2 Serrano Chilis (stemmed & finely chopped)
1 (28 ounce) Can Diced Tomatoes
2 Tsp Garam Masala
1 Tsp Ground Coriander
1 Tsp Salt
1/2 Tsp Turmeric
2 (15 ounce) Canned Chickpeas (drained & rinsed)
1/2 Cup Water

How to Do

A popular vegetarian dish, Chana Chole originates from the Punjab region of North India. A spicy chickpea curry that is usually served with naan bread or over rice.

Utensils: large frying pan

Suggested Pairing: naan, rice

Directions:

STEP 1:

Heat the oil in a large frying pan and add the cumin seeds. Stir on medium heat for about 1 minute, until fragrant.

Add the onion, garlic and chilis to the pan. Cook, stirring occasionally, for 5 to 7 minutes or until the onions have softened.

STEP 2:

Stir the ginger, garam masala, coriander, turmeric and salt into the pan and continue cooking for an additional minute.

STEP 3:

Add the chickpeas, water and the tomatoes, along with their liquid, to the pan. Stir to combine and bring to a simmer.

STEP 4:

Reduce the heat to medium low and continue cooking, stirring occasionally, for about 20 minutes. The sauce will thicken.
