Ingredients:
1 Large Onion (thinly sliced)
1 Egg (optional)
½ Cup Milk
½ Cup Chickpea Flour
½ Cup All Purpose Flour
1 Tsp Baking Powder
1 Tsp Turmeric
½ Tsp Chili powder
½ Tsp Ground cumin
½ Tsp Ground coriander
¾ Tsp Salt
Canola Oil (for frying)
Yogurt And Cucumber Sauce:
1 Cup Plain Greek Yogurt
¼ Seedless English Cucumber (grated)
1 Tbsp Dill or Parsley (chopped)

How to Do

A highly popular Indian snack, you will find many variations of these bhajiya’s (fritters), made with onions, cauliflower, whole green chili and even paneer! This recipe of onion bhajiya’s are made from a batter of chickpea flour and spices, which are deep fried and served with a cool yogurt raita.

Utensils: large mixing bowl & spoon, large skillet or cast iron pan, slotted spoon

Suggested Pairing: yogurt cucumber sauce

Directions:

STEP 1:

Beat together the egg, milk, chickpea flour, all-purpose flour, baking powder, turmeric, chili powder, cumin, coriander and salt in a large bowl.

STEP 2:

Stir in the sliced onions.

STEP 3:

Heat the oil to a large skillet or cast iron pan to 350 degrees.

STEP 4:

Working in batches, drop spoonfuls of batter into the oil, being careful not to crowd the pan. Fry for 2 to 3 minutes on each side or until golden brown. Remove with a slotted spoon to a paper towel lined plate. Repeat until you’ve fried all the batter.

STEP 5:

Stir together the cucumber sauce ingredients and serve with the onion fritters.
