Shrimp Tikka Tacos w/ Raita Dip Recipe

Ingredients

1 lb fresh or frozen shrimp (cleaned and deveined)
1 large green zucchini
2 to 3 large red peppers
4 to 5 soft tortillas or naan bread
>>MARINADE INGREDIENTS<<
1 tbsp garam masala
1 tsp of dried fenugreek leaves
A pinch of chili powder
1 tsp of salt (per taste)
1 cup yogurt (full fat)
>>RAITA INGREDIENTS<<
1/2 cups yogurt (Greek or regular plain)
1/3 medium cucumber
1/2 small onion (thinly sliced)
1/2 tbsp. fresh mint (chopped)
¼ tsp ground red chili powder
¼ tsp cumin
¼ tsp ground coriander
½ tsp lemon rind (optional)
A pinch of salt and sugar to taste.

How to Do

Delicious tikka marinated shrimp tacos, topped with a cool raita dip. A mouthwatering combo of spicy and cool. One of our favorite Indian inspired tacos!

Utensils: mixing bowl, skewers, grill (grill pan, skillet)

Suggested Pairing: top it with our raita dip!

 

Directions:

 

STEP 1:

Chop the vegetable in bite-size chunks.

 

STEP 2:  

To make the marinade mix all the ingredients together, pour over the vegetables and shrimp, mix gently to coat evenly and cover the bowl.  Allow to marinade in the fridge for a minimum 4 hours or overnight to get the best flavour.

 

STEP 3: 

Thread onto skewers.

 

STEP 4:

Grill on a preheated electric grill (skillet on the stovetop, outdoor grill, grill pan, broiler, or oven’s grill would also work without compromising the flavour) for 2-3 minutes on each side for the shrimp and 4-5 minutes on each side for the vegetable skewers.

 

STEP 5: 

In the meantime make the raita dressing by mixing the yogurt with the onion, the mint, the ground chilli, cumin, coriander a little bit of sugar and salt to taste. Add the grated cucumber and mix well.

 

STEP 6:

Fill the tortillas with the cooked shrimp and vegetables, drizzle with raita dressing. Serve warm.
