Yogurt Raita with Cucumber & Mint

2.5 Cups Yogurt
1 Medium Cucumber
1 Small Onion (thinly sliced)
1 Tbsp Fresh Mint (chopped)
1/2 Tsp Lemon Rind (optional)
Pinch of Salt (to taste)
Pinch of Sugar (to taste)
How to Do
Raita is a refreshing, classic Indian side dish, perfect for balancing the warmth of spicy meals. Traditionally made with “dahi”, a salted type of yogurt, it is just as wonderful made with Greek, or regular plain yogurt. Try our recipe with cucumber, onions and mint!
Utensils: large bowl
Suggested Pairing: curries, biryani, naan
Peel a few thin, vertical slices of cucumber and set aside on a paper towel to absorb the liquids. Roughly grate the rest of the cucumber and squeeze out the excess juice.
Season with salt and place on a paper towel to absorb the remaining juice while you mix the rest of the ingredients.
In a large bowl mix the yogurt with the onion, the mint, the ground chilli, cumin, coriander a little bit of sugar and salt to taste. Add the grated cucumber and mix well.
Serve cold, garnished with the cucumber peels and sprinkle with the lemon rind and extra chilli flakes if desired.
