Ingredients

INGREDIENTS
1/2 cup Chickpeas (canned)
½ cup Beans (canned)
½ cup Sundried tomatoes
½ Jalapeno pepper (piece = half a pepper)
2 cups Cherry tomatoes
½ cup Yellow onion
1 clove Garlic
1/4 cup Dill
¼ cup Basil
¼ cup Parsley
½ cup Feta cheese
SUMAC VINAIGRETTE
Juice of 1 medium sized lemon
2 tbsp Olive oil
1 tbsp white wine Vinegar
Pinch of Salt
Pinch of Pepper
1 tspn Sumac

How to Do

We love this Middle Eastern chickpea salad with fresh herbs and a drizzle of sumac vinaigrette! It's perfect as a meal, as a pita stuffer or as a side. So refreshing.

Utensils: large mixing bowl

Suggested Pairing: sumac vinaigrette dressing, pita slices

 

Directions:

STEP 1:

Rinse the chickpeas and beans.

 

STEP 2:

Chop all the herbs and vegetables and mix in a salad bowl. Top with crumbled feta cheese. (Skip the cheese if vegan). 

 

STEP 3:

Whisk all the ingredients together for the sumac vinaigrette, add to the salad and mix well.

 

STEP 4:

It's ready to serve!
