2 Pita Breads
1 Tbsp Olive Oil
1 Tsp Zahtar
2 Cups Mixed Salad Greens
1 Cup Cherry Tomatoes (halved)
½ Seedless English Cucumber (sliced)
¼ Red Onion (sliced)
Sumac Vinaigrette:
1 Clove Garlic (finely minced)
1 Tbsp Lemon Juice
½ Tsp Sumac
3 Tbsp Olive Oil
Salt & Pepper (to taste)

Description

The ubiquitous salad of Middle Eastern cuisine, fattoush, is dressed with sumac vinaigrette. It includes crispy pieces of pita mixed into the salad for an amazing crunchy texture. A great light and zesty add to any meal!

Utensils: baking sheet, parchment paper, baking tray, mixing bowl & spoon

Directions:

STEP 1:

Pre-heat the oven to 400 degrees. Brush the pitas with the olive oil and sprinkle on the za’atar. Place on a baking sheet lined with parchment paper and crisp in the oven for 10 minutes. Cut or tear the pita into bite size pieces.

STEP 2:

Whisk together the sumac vinaigrette ingredients to make the dressing.

STEP 3:

Assemble the salad by tossing together the vegetables and pita pieces. Arrange on a platter and drizzle on the vinaigrette. For best flavor, let stand for a few minutes to allow the pita to absorb the dressing.
