Ingredients

INGREDIENTS:

1 Large Eggplant
2 Tbsp Canola Oil
2 Eggs (hard boiled & sliced)
¼ Cup Hummus
1 Large Tomato (diced)
½ Seedless English Cucumber (diced)
¼ Red Onion (diced)
1 Tbsp Lemon Juice
¼ Tsp Sumac
Tahini Sauce (store bought or recipe below)
¼ Cup Amba Sauce (or mango chutney)*
Salt & Pepper (to taste)
Pinch of Red Pepper Flakes (optional)
4 Pita Rounds (cut in ½)
TAHINI SAUCE:
¼ Cup Sesame Paste
¼ Cup Water
2 Tbsp Lemon Juice
½ Tsp Garlic Powder
½ Tsp Ground Cumin
Salt & Pepper (to taste)

How to Do

Sabich is a commonly found Middle Eastern sandwich of pita, stuffed with fried eggplant, hard boiled eggs, hummus, tahini, vegetables and spices. If you love falafel stuffed pita’s, then this is a great flavor packed recipe to explore! 

*Amba is a spicy mango sauce common in Middle Eastern cuisine. You can find it in some specialty markets but mango chutney is a good substitution.

Utensils: frying pan, mixing bowl & spoon

Directions:

STEP 1:

Slice the eggplant into 1/4” rounds. Add the oil to a large skillet or cast iron pan and fry the eggplant rounds for about 5-7 minutes on each side or until golden brown.

STEP 2:

Whisk together the tahini ingredients to make the sauce.

STEP 3:

In a small bowl, toss together the diced cucumber, tomato, red onion, lemon juice and sumac.

STEP 4:

To assemble the sandwiches, spread the hummus evenly into the pita pockets, stuff with the fried eggplant rounds and the sliced hard boiled eggs. Spoon in the vegetable salad and drizzle with the tahini sauce and amba sauce. Season with salt, pepper and red pepper flakes, if using.
