Beef & Lamb Kofta Kebab

Did you know the word “kofta” comes from the Farsi words kōfta and kōftanKōfta refers to rissole, a circular ball of savory, minced meat stuffed inside a pastry. This delicious Middle Eastern recipe serves a minced mixture of spiced ground lamb, beef or both on a skewer. When grilled, you are left with a tender and flavorful piece of meat. They can be enjoyed on their own, topped on a salad, inside a pita sandwich, or with our hummus recipe!

In a large bowl, mix together the ground beef, lamb, onion, garlic, parsley, cumin, coriander, chili powder, salt and pepper.

Divide the meat into approximately 24 (1 oz.) balls (you can use a cookie scoop).

Thread approximately 6 balls onto each of 4 metal or wooden skewers.

Tip: If using wooden skewers, soak them in water for about 15 minutes before placing the meat on them. This will help prevent them from catching fire on the grill.

Brush your grill lightly with cooking oil and grill the kebabs, turning occasionally, for 10 to 15 minutes or until browned.
