In a large mixing bowl combine the yeast with half the amount of water. Add the sugar to activate the yeast and mix well. Fold in two tablespoons of flour and allow to rest for 10-15 minutes.
Add the oil, salt mix and gradually pour in the rest of the water while using your hands to knead the dough. If the dough is too sticky add a little flour. If it’s too stiff add a little water until you get a smooth, easy to knead consistency.
Lightly flour the mixing bowl and place the dough inside, covered with a towel. Allow to rise for 30 minutes. In the meantime preheat the oven at a medium temperature and line a baking tray with parchment paper.
Lightly flour a surface and knead the dough one last time. Divide into two and shape into circles. Use your fingertips to create little dips on the dough for the toppings to lie in.
Mix half a cup of Za’atar with 1/4 cup olive oil. Add a pinch of salt to taste. Spread on top of the Manakish dough and sprinkle with sesame seeds (optional). Bake in the preheated oven for 10 minutes until golden and crispy on the outside. That's it!
