Chop the vegetables into bite-size chunks.
To make the marinade, mix all the ingredients together and pour over the vegetables and shrimp. Mix gently to coat evenly and cover the bowl. Allow to marinade in the fridge for a minimum of 4 hours or overnight to get the best flavor.
When ready, thread the protein and vegetables onto the skewers.
Grill on a pre-heated electric grill (skillet on the stovetop, outdoor grill, grill pan, broiler, or oven’s grill) for 3-5 minutes, on each side.
In the meantime, make the raita dressing by mixing the yogurt with the onion, the mint, the ground chili, cumin, coriander and a little bit of sugar and salt to taste. Add the grated cucumber and mix well.
Unthread the cooked shrimp and vegetables and fill the tortillas. Drizzle with raita dressing and serve warm.
Note: use tortillas of choice. We personally like corn, naan or thick pita's.
