Ingredients

1/4 cup Soy sauce
2 tbsp brown sugar
1 tbsp chili flakes
1 ½ cup white plain rice
1 cup carrots
1 cup frozen peas
½ cup peanuts
½ cup onions
2 cloves garlic
3 medium sized eggs
2 tbsp Sesame oil

How to Do

Delicious vegetarian fried rice, yum! Soft white rice mixed with carrots, onions and garlic, drizzled with a flavorful soy-sauce mix!

Utensils: non-stick deep pan, mixing bowl

Suggested Pairing: meat or veggie dish

 

Directions:

 

STEP 1:

Dice the carrots and onions. Mince the garlic. In the meantime bring a pot of salted water to a boil and cook the rice.

 

STEP 2:  

Heat the oil in a non-stick, deep pan and sauté the carrots with the onions for 5-7 minutes until tender. Add the peas and allow to cook for 5 more minutes before adding the rice and the peanuts.

 

STEP 3: 

Whisk the soy sauce with the brown sugar and chili flakes. Pour into the rice mix and stir to combine.

 

STEP 4:

Make a well in the middle of the pan by pushing the rice mix on the sides. Crack in the eggs and scramble gradually incorporating them to the rice.

 

STEP 5:

Cook for 2-3 more minutes stirring constantly and serve warm.
